The popular dining option Einstein Bros. Bagels is expected to reopen on April 1 after closing last school year for relocation to the Weaver Building.
The original opening date for Einstein Bros was set for Oct. 1, 2018 but was pushed back several times due to permit delays and a competitive bidding process. The permit process, which normally only last two to three weeks, took nearly 16 weeks to complete.
“There was just a lot of permitting going on at the time we put in the request for Einstein’s,” said Dr. Billy Martin, Associate Vice President and Senior Student Affairs Officer. “Once the request is sent to Frankfurt it’s out of the university’s hands, we can’t do anything until we get the permits.”
With the permits set and the construction underway Einsteins is now just waiting on a shipment of equipment from the vendors. Once the shipment has arrived everything will be placed in Einsteins and the final construction process will be completed.
This shipment is expected in early March and should be installed “mid-March,” according to Martin. The last week in March will be dedicated to staff training just in time for the guaranteed April 1 opening.
“Einsteins was my favorite choice on campus before the Moore building closed,” said Baylee Peck, junior elementary education major from Louisville, Kentucky. “I’d go out of my way to get a bagel and a smoothie because they were the best.”
Einsteins isn’t the only dining update the students of EKU can expect. According to Martin, President Benson is interested in “refreshing” Java City in the Library. There will be more food options, new furniture and a whole new look to the Java City.
“We are working hard to have this completed during the summer months so students, faculty and staff will be able to utilize in the fall semester,” said Martin.
